1. Yes. You (or your company) needs to get all correct documents filed with the Dubai Labour Department before expiry of grace period. You get a new labour card and transfer your residence visa (I think).
2. If your application has been filed with labour department then it should be fine from the perspective of working without a work permit. But otherwise, yes, you can do a Hatta visa run and get another 30 days.
3. Visit visa can be transferred to residence visa easily if documents are filed correctly and on time.
4. Yes if you get Abu Dhabi visa cancelled. But that assumes a degree of trust because they will have to say that you are officially working, and you won't be. So you could claim they're not paying your salary, and they could claim you're absconding, etc etc.
5. Residence visa depends on what sponsor says on documents. It happens that documents say one thing and employees do something else. Usually there's no problem if the discrepancy isn't large (e.g. secretary vs personal assistant vs receptionist). I would guess the actual hours worked are an arrangement between you and your employer, and unless they are excessive (the law has certain restrictions), then the Labour Department isn't going to be too concerned. Unless, in your spare time, you go and work for someone else also. A company is unlikely to want to change residence visas and work permit job designations - the process takes time and costs money.
6. Once the correct documents have been accepted by the Ministry of Labour, or sooner if your new company gets you an employment visit visa (different from normal visit visa, and different from work permit).
